This is grilled cheese to the max!
Here’s what you need…
2 thin, boneless chicken breast
2 ripe avocados
1/2 small red onion, chopped
1 Roma tomato, chopped
1 clove garlic, minced
1 tablespoon extra virgin olive oil
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
4 slices sourdough bread
4 slices Cheddar cheese
Here’s what you do…
To make the guacamole – Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a large bowl. Using a fork, mash the avocado. Add the onion, garlic, cilantro, lime juice, salt and pepper. Stir until well combined. Add the chopped tomato and stir.
To make sandwich – Season chicken as desired (I used season salt, pepper and garlic powder). Add EVOO to a pan and heat until it shimmering. Add chicken to pan and cook until no longer pink in the middle, searing both sides. Place cooked chicken to the side.
Heat a separate pan or griddle to medium-high heat. Butter outer slices of bread and place butter side down in pan. Add cheese to both sides of bread. Grill both slices butter side down for about 1 minute, then spread guacamole on one slice of bread. Add chicken breast a close the sandwich. Cook evenly on both side until you achieve desired brownness.
